Meximodo Cocina Mexicana & Tequila Bar Sets Timeline for Jersey City Opening

One of the more acclaimed restaurants to open in the Garden State is rearing up to launch its second location as Meximodo is putting the finishing touches on their Jersey City space.

The Mexican restaurant is scheduled to open this spring or early summer at Haus25. The flagship location in Metuchen opened back in 2023, and Jersey Digs broke the news about the restaurant’s expansion to 25 Christopher Columbus Drive that same year.

Meximodo is part of the Le Malt Hospitality Group, whose concepts include Le Malt Lounge in Colonia and Le Malt Royale in Red Bank. The trendy dining spot describes its cuisine as a “fusion of classic and innovative Mexican dishes, prepared with locally sourced ingredients and presented with artistic flair.”

Celano Design Studio Company drew up their 8,000-square-foot Jersey City space, using vibrant colors, bold textures, and intricate details in the hope of transporting diners to Mexico. Meximodo will sport an area called the Rose Room for private events overlooking the main dining room, plus an airy outdoor seating area sheltered by a large retractable awning and surrounded by a garden of colorful flowers.

“We’re so excited to help bring Meximodo’s bold and modern Mexican flair to Jersey City,” says the studio’s founder, Vincent Celano. “Like the Metuchen location, we wanted to bring the same energy from the restaurant’s Mexican cooking into the design of the space while honoring Jersey City’s distinct skyline and richly diverse community.”

Helming the Meximodo kitchen is Corporate Chef Antonio Carballo, who, like many Latin chefs, began his culinary education at his family’s restaurant in Puerto Vallarta. Formal education followed in the US at the Culinary Institute of America and at several high-profile restaurants in New York City.

Some of the eatery’s most popular items are pork belly tacos, shrimp tacos, churros, corn flan, steak & cheese tacos, corn & roasted tomato guacamole, chicken enchiladas and birria tacos.

Meximodo’s beverage program includes innovative cocktails like a Cantarito, which blends Patron Blanco, orange and grapefruit juice, Chamoy, and Tajin. The restaurant also earned recognition from the Guinness Book of World Records for its vast tequila, mezcal, and agave library, which features over 1,000 varieties.

The restaurant’s Jersey City location plans to schedule brand tastings, distiller visits, and dinners dedicated to sharing the wealth and depth of the bar’s inventory. While an exact opening date hasn’t been nailed down yet, they aim to open in the late spring or early summer of this year.
