Chipotle Mexican Grill is looking to open its first location in eastern Mercer County.
An application for preliminary and final site plan approval was filed with East Windsor Township by Chipotle Mexican Grill of Colorado, LLC in connection with a proposed restaurant at 319 Route 130, according to a public notice from earlier this month.
The address in question is situated within the Town Center Plaza near the Hightstown Bypass. The notice said that the space where the Chipotle location could open is a one-story vacant structure that used to contain a bank. The front of the shopping center includes an empty building that was previously occupied by a Capital One branch.
Chipotle’s two existing Mercer County locations are situated two miles from each other along the Route 1 corridor.
The Route 130 location would offer a drive-thru or mobile pick-up window, according to the notice, which also mentioned that the East Windsor Township Planning Board is scheduled to hear this application during its virtual meeting on Monday, December 21. However, the agenda for the meeting at 5:00 p.m. states that this matter is being listed “for scheduling purposes only.”
