After several years of selling their treats at various cafes around Hudson County, a local couple has finally opened their first brick and mortar spot along a quiet street in The Heights.
Over the weekend, The Law of Donutgineering (or LoDG for short) started serving customers out of their 7 Bleecker Street storefront. Tucked away in a one-story building just off Central Avenue that formerly housed a hair salon, LoDG’s claim to notoriety is “donuts you’ve never seen, heard or even dreamt of before.”
The business was founded by Edward Alfonso and Flavia Carballo, a biomedical engineer and a lawyer respectively. They realized a few years back that there were not any remarkable craft donut spots in the area, so they set out to fix that problem by filling the void themselves.
The LoDG had been operating out of a kitchen in Hoboken and locals might recognize their donuts from spots like Jefferson’s Coffee, 9 Bar Café, or Hudson Coffee. The Law of Donutgineering makes their treats entirely from scratch and has a bunch of globally inspired options at their recently opened location.
The menu of treats at The LoDG, which are made to order, includes their signature El Balsero, a guava cake donut drizzled with velvety cream cheese. The Pig n’ The Fig features fig caramelized bacon over a cheesecake-stuffed donut, while the Platanough consists of a plantain cream-filled donut dipped in a cinnamon-sugar glaze and topped with a fried sweet plantain.
A variety of glazed donuts are available at The LoDG including unique options like a Ma’coco, an organic matcha glaze topped with organic shredded coconut. Their glazed donuts can be ordered in both vegan and gluten-free versions and the business is available for catering through their website.
The Law of Donutgineering can be followed on Instagram at the handle @the_lodg and is currently open five days a week during their soft launch. The business is closed on Mondays and Tuesdays, but Wednesday they are open from 8 a.m. to 7 p.m. Thursday and Friday hours run from 8 a.m. to 4 p.m. and they are open on weekends from 9 a.m. to 4 p.m.
