The lights won’t be off for long at a recently vacated restaurant space on Morris Street as a new dining experience called Perquín is looking to open in Jersey City over the coming weeks.
Following Bistro La Source’s move to 299 Marin Boulevard, the storefront at 85 Morris Street is officially empty. But construction has already begun at the property with the group behind Santelli’s Hospitality looking to open a unique dining experience in the space.
The company, led by owner Bryan Girón, was profiled in New Jersey Digest last year. Giron’s resume is impressive, with stints at New York City restaurants like Barbuto and Shukette plus a stop at Jersey City’s acclaimed Bread & Salt.
The Honduran chef launched the concept coming to Jersey City during COVID-19 as a private dinner. Perquín, which translates to “road to the embers” in the language of the Indigenous people of the Lenca tribe in Honduras, was a multi-course dinner designed to showcase “the complexity, richness, techniques, and products that Honduras and the rest of Latin America have to offer.”
While an exact menu for Perquín’s brick-and-mortar operations hasn’t been released, the restaurant aims to highlight Honduran cuisine with accents of African, Caribbean, and Spanish influences.
Perquin has an ambitious timeline for opening, as they posted on their social media that they aim to open within 30 days. The restaurant can be followed on Instagram at the handle @perquinjc.
