A popular fast-casual Mexican restaurant that has been serving customers for almost 15 years is officially coming to Downtown Newark as Bubbakoo’s Burritos is slated to open inside a recent development.
Newark’s Historic Preservation Commission recently approved a signage application submitted by the business for a storefront at 48 New Street. Founded in 2008, Bubbakoo’s Burritos was started by Paul Altero and Bill Hart to highlight the roots of New Jersey’s skater and shore scene.
The company now operates over 40 spots in New Jersey, opening in Jersey City’s Journal Square neighborhood last year. Bubbakoo’s Burrito’s has also expanded to dozens of locations across 10 different states.
The menu at Bubbakoo’s is all made to order and features entirely customizable entrees. Guests can choose from options like burritos, bowls, quesadillas, a trio of tacos, nachos, taco salad, or “the chiwawa,” an original concoction of the restaurant that consists of lightly fried panko-crusted cheesy rice ball topped with nacho cheese.
Sixteen different protein options are available to stuff your entrée, including barbeque shredded chicken, general Tso’s chicken, sriracha pork, veggie patty, hibachi steak, or sweet chili shrimp.
Their menu is rounded out with desserts like apple pie empanadas and “love chips,” which are lightly fried flour tortillas cooked sprinkled with powdered sugar and doused with caramel.
The Newark outpost of Bubbakoo’s Burritos will benefit from the foot traffic of Rutgers Newark and joins McGovern’s Tavern and a Jersey Mike’s outpost at the New Street property.
The company has already listed the outpost as “coming soon” on their website but has not announced a timeline for opening in the Brick City.
