Mercer County could soon have a Shake Shack location. The Manhattan-based chain, known for its burgers, fries, frozen custard, and milkshakes, is planning to open a restaurant on a major commercial corridor between Princeton and Trenton.

According to a legal notice released yesterday, this Shake Shack is being proposed by 3509 Wick, LLC for 3303 Brunswick Pike/Route 1 in Lawrence Township, near the Mercer and Quaker Bridge Malls. The property has long contained a building that has been home to Patio World Home and Hearth.

The 3,622 square foot Shake Shack location is slated to be 35 feet tall, and the developer is currently seeking preliminary and final site plan approval for the project with variances for lot frontage, lot width, and parking. While Township codes require 121 spaces, the company is seeking to include just 70, the notice states.

The Lawrence Township Planning Board is scheduled to hear the proposal during its meeting on Monday, August 7th beginning at 7:00pm at the Municipal Building on Route 206.

Shake Shack has been expanding into the Garden State in recent years, and has opened two locations in Paramus and one in Bridgewater. Construction is underway on a new Shake Shack in Livingston, and another location has been proposed for Evesham.

This is not the only new burger place planned for the area. Johnny Rockets is in the process of opening a location at the nearby Quaker Bridge Mall.
